Social-Distancing Day #? Recipe makes 9 cupcakes
Ingredients
small squeeze of lemon juice
1/8 cup milk (1 oz)
1 egg separated
1/4 cup butter (half of a stick)
1/2 cup sugar
1 cup flour
1/2 teaspoon baking soda
1 teaspoons baking powder
pinch of salt
2 ripe bananas mashed
Directions
- Preheat oven to 375°F.
- Add lemon juice to bottom of measuring cup. Add enough milk to make 1/8 cup (of lemon juice and milk) and set aside.
- Beat egg white on high until stiff peaks form and set aside.
- In a separate larger bowl, cream together butter and sugar with hand mixer.
- Add in yolks and milk mixture.
- Mix together flour, baking powder, baking soda & salt. Slowly add to butter mixture and mix.
- Stir in bananas. Then gently fold in egg white mixture. Make sure it gets completely folded in.
- Pour muffin mixture into lined muffin tin.
- Bake for 15 min or until cupcakes spring back when lightly touched.
- Let cool completely.
- Frosting:
- 4 oz (half a brick) cream cheese, softened to room temperature
1/4 cup (half of a stick) butter, softened to room temperature
1 1/2 cups powdered sugar
1/2 teaspoon pure vanilla extract
In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand-held mixer, beat the cream cheese until smooth. Add the butter and mix for about 30 seconds-1 minute until well combined and smooth. Add in the powdered sugar and vanilla extract and continue mixing until fully combined, scraping down the sides of the bowl as needed.
